My dad makes the best chocolate chip pancakes–perfectly golden, fluffy, and so good that they do not need the assistance of butter, syrup, or whipped cream. Whenever I am back home, my dad’s chocolate chip pancakes are always on my wish list.
Fittingly, on Father’s Day, I spotted the chocolate chip flapjacks on the brunch menu at Sixth Engine, one of my favorite new(ish) additions to the neighborhood. Even better, I did not have to forgo my brunch potato fix (in the form of chorizo and eggs hash) because they offer the flapjack in a side portion. Paired with french press coffee, fresh-squeezed orange juice, a shaded patio table, and a perfectly sunny Sunday morning (with great friends, of course), it was definitely one of my favorite brunches of recent memory.
